Pinoy Style Chicken Adobo
Do you love chicken adobo like we do in this house? I love chicken adobo! Growing up in the Philippines this was definitely one of my favorite Filipino food – hmm maybe next to Sinigang:)
I especially love my chicken adobo with just a little bit of sauce (thick), garlicky, and has a peppery taste! Served over rice and boiled egg on the side – it’s perfection!
INSPIRATION
I remember growing up we would do a road trip with my ‘tita’ (auntie) and there was this little place, I think it was in ‘Tondo’. I was too young to remember the place but I sure remembered the chicken adobo my aunt would get from this tiny bistro. It was chicken adobo with rice and boiled egg on top all wrapped in banana leaves. It’s like heaven when you open it – the smell of the steamed rice with the garlicky adobo – yummm! It was to live for!
Ingredients used in this video:
8-9 pcs of chicken drumstick
2tbsp white vinegar
4 tbsp soy sauce
1/2 tsp peppercorn
2 bay leaves
1 tbsp coconut sugar
4 cloves chopped garlic
4 tbsp organic canola oil (any neutral flavor of oil will work)
Salt to taste
3/4 – 1 cup of water
