Vietnamese Salad Rolls with Peanut Sauce
Here’s a video of my toddler and I making the ever yummy Vietnamese salad rolls.
Okay, I love love love salad rolls and we used to order them everytime we go to a Vietnamese restaurant for pho, but darn, they can be expensive for something too little! Now that I make this at home we enjoy it a lot more. For one, we get to pick the meat and the seasoning we put on the meat. Knowing what’s in your food is always a good thing! I love making these with seasoned pan-fried shrimp or honey garlic beef just like this one on my video.
You can also add diced carrots to your salad roll.
For the peanut sauce, don’t be afraid to use almond butter as well if that’s what you prefer.
Peanut Sauce Ingredients:
1/2 cup peanut butter
1/4 cup of water
pinch of salt and pepper
1 tbsp of coconut sugar (or honey or whatever sugar you have handy)
1/2 tsp of garlic powder (don’t be afraid to use more:) if you’d like)
1 tbsp of soy sauce
1 lemon wedge
1 tbsp sriracha or hot sauce (add however much you need)
Mix all together and keep stirring on LOW HEAT until it’s semi-thick. If in any case you’ve added too much water and it has become too runny, you can a little bit of cornstarch to thicken it up.
Enjoy!
