Chicken and Chickpea Coconut Curry with Turmeric

  • 2 tbsp olive oil
  • 1/2 cup white onion chopped
  • 2 cloves garlic chopped
  • 2 tbsp ginger cut into strips
  • 1 tomato cut into cubes
  • 1 cup coconut milk
  • 1 cup chickpea I used garbanzo beans in a can
  • 1 chicken breast cut into bite-size pieces
  • 1 tbsp red curry
  • 1 tbsp turmeric powder
  • cilantro
  • lemon or lime
  • salt and pepper to taste


  1. In a medium pot, over medium heat, sauté the onions, garlic and ginger.

  2. Add in the tomatoes. Cook for a few minutes. 

  3. Add the coconut milk and chicken.

  4. Cover the pot and bring to a boil

  5. Once it boils, add the curry and turmeric powder. Give it a good mix. Add salt and pepper if needed. 

  6. Turn off the stove. Add the spinach. 

  7. Serve. Garnish with cilantro and drizzle lemon juice overtop.
