Stuffed and Baked Sweet Mini Peppers
Who doesn’t love cheese?! My daughter. Yes, I was surprised as well! Having said that, she won’t be having any of this cheese stuffed mini peppers appetizer. It’s all good, we mamas know we will have to make something else to accommodate all the taste buds in the house. Fun but not so fun at times.
We were at the grocery store and spotted these sweet mini peppers. How could I miss it, it was looking bright and anything bright is inviting to me – food wise anyway. Just eating these sweet mini peppers on its own is yummy enough but even yummier when stuffed with some oh so gooey cheese. I had some in our fridge so I thought I might as well use it. Nothing worse when you see your food starts to go bad – ugh what a waste of money!
Ingredients:
8-10 sweet mini peppers
1-1/2 cup chopped marble cheese
2 tbsp EVOO
pinch of salt
pinch of pepper
1 tsp dried thyme
2 cloves of chopped garlic
Combine all the ingredients except for the peppers
Prepare the mini peppers:
Wash and dry the peppers
Cut them in half lengthwise
Take all the seeds out
Stuff them with the cheese stuffing
Bake for 10-12 minutes at 400 °
…and voila! Enjoy!
