Chicken and Chickpea Coconut Curry with Turmeric

Ingredients
- 2 tbsp olive oil
- 1/2 cup white onion chopped
- 2 cloves garlic chopped
- 2 tbsp ginger cut into strips
- 1 tomato cut into cubes
- 1 cup coconut milk
- 1 cup chickpea I used garbanzo beans in a can
- 1 chicken breast cut into bite-size pieces
- 1 tbsp red curry
- 1 tbsp turmeric powder
- cilantro
- lemon or lime
- salt and pepper to taste
Instructions

In a medium pot, over medium heat, sauté the onions, garlic and ginger.

Add in the tomatoes. Cook for a few minutes.

Add the coconut milk and chicken.

Cover the pot and bring to a boil

Once it boils, add the curry and turmeric powder. Give it a good mix. Add salt and pepper if needed.

Turn off the stove. Add the spinach.

Serve. Garnish with cilantro and drizzle lemon juice overtop.
