Coconut Chicken with Pineapple Recipe
Here’s an easy coconut chicken recipe you can make at home. This dish is widely cooked in Asian countries like Thailand, Philippines, Laos and other countries that are relatively close to countries mentioned. There are different versions but the key ingredients are coconut milk, pineapple and fish sauce. I feel the fish sauce plays a huge part in this dish. I can’t really put it to words, but when I tried making this in the past using regular salt vs fish sauce – there was something about the taste that wasn’t as appealing to my taste buds. So I guess it’s fair to say that fish sauce would be one of the main key ingredients in this recipe. However, if you are allergic or react to fish sauce or just don’t like the taste of it, then just use regular salt.
I love this dish mainly because the mixture of coconut and pineapple is just THE BOMB. Even better, when added with some Thai chili just like I did with this one. If you’re feeling a little more adventurous, try garnishing this with some basil.
This recipe is best served with white rice or noodles. I decided to partner this with some buckwheat noodles since buckwheat noodles, also known as ‘soba’ is better for you vs white rice. You can also try this with brown if you’d like.
How to cook soba noodles:
Cook the buckwheat noodles in boiling water for 1-2 minutes. Nothing more or you’ll get some soggy noodles unless that’s what you’re going for. Once time is up, run the noodles under cold water.
Easy Coconut Chicken with Pineapple Recipe
Ingredients
- 4 Boneless chicken cut into bite size pieces
- 1/2 cup White onion rough chop
- 2 Garlic cloves minced
- 2 tbsp Ginger cut into strips
- 1 Tomato rough chop
- 1 cup Coconut milk
- 3/4 cup Sweet pineapple cut into chunks
- 1-2 tbsp Fish sauce
- Pepper
- Parsley optional
- Thai chili optional
Instructions

Start with a hot cooking pan, add some olive oil.
Add the garlic, onion and ginger. Sautee until semi brown.
Add the chicken, cook until brown.
Add the tomatoes. Cook for another 3-5 minutes.
Add the coconut milk. Bring to a boil.
Add the pepper and fish sauce.
Add the pineapple. Bring to a boil.

Transfer to a bowl.
Garnish with parsley and chili (optional)
