I had ice cream twice this past weekend. Not once, but twice! I tell you it’s not easy living in an area where’s there’s an ice cream place where they make their own ice cream. The flavors are to die for! Anyway, the reason I decided to make this, well, because I was craving for something sweet but definitely not going back to that ice cream place this week (not until next weekend lol)!

This one is super easy to make it will blow your mind away! Let me just go through some of the good things about this dessert.

CHIA SEEDS – A staple in my kitchen! Chia seeds have endless benefits, endless! Despite their size, chia seeds are among the most nutritious foods on the planet. They are loaded with fiber, protein, Omega-3 fatty acids and various micronutrients.

BUCKWHEAT HONEY – Buckwheat honey is made by bees that collect nectar from buckwheat flowers. Buckwheat has little tiny flowers, this means bees that make buckwheat honey have to work harder to collect enough nectar. Buckwheat isn’t a grass although the ‘wheat’ word is attached to it. It actually produces a type of fruit similar to rhubarb. Buckwheat honey is less sweet compared to the traditional honey. It’s higher in certain antioxidants, so it might actually be better for you than other, sweeter types of honey.

BLACKBERRIES – Blueberries are a good source of vitamin K1, vitamin C and manganese. They also contain vitamin E, vitamin B6 and copper, to a lesser extent.

COTTAGE CHEESE – Cottage cheese is an excellent source of protein with relatively few calories. It is also packed with many nutrients like B vitamins, calcium, phosphorus and selenium.

Ingredients

  • 2 tbsp Buckwheat Honey any honey will do
  • 4 tbsp Smooth Cottage Cheese
  • 1 cup Blackberries
  • Chia Seeds

Instructions

  1. Chia Seeds - 

    You can add as much chia seeds as you want. I like mine in a gelatinous form, so I soaked the chia seeds in cold water for about 20 minutes. Just add a few spoonfuls of chia seeds in a cup or glass and add just enough water that it covers all the seeds. Stir and let it chill for 20 or so minutes. You can also add the chia seeds as it is.

  2. Prepare (per cup or per person) - 

    In a cup, jar or drinking glass, add 1 tbsp of honey, 2 tbsp of smooth cottage cheese, add the chia seeds. Mix all together. 

    Add the blueberries. Mix it all together to cover the berries with the cottage cheese mixture.

    Serve.

  3. Optional - 

    If you like it a little colder, pop it in the freezer for about 30-45 minutes before digging in.
