Here’s one of my salad recipes – avocado vegetable blend with balsamic dressing. It’s easy to make and most of the ingredients I used are replaceable or optional. Example, if you don’t have a ‘vegetable blend’ salad handy, you can use plain kale or spinach. Green onion is also optional as well. Vegetable blend (in bags) is available in grocery stores. I especially like the blend of cabbage, broccoli, kale cauliflower and brussels sprouts.
Avocado Vegetable Blend with Balsamic Vinegar Dressing
Ingredients
- 3 cups Vegetable Blend Available at most grocery stores. See example above.
- 1 cup Tomatoes
- 3-4 Avocados
- 4 Eggs
- 2 tbsp Olive oil
- 1 tbsp Balsamic vinegar
- 2 tbsp Lemon
- Salt
- Pepper
- Green onions optional
Instructions

Mix the olive oil, balsamic vinegar, lemon, salt and pepper
Add the vegetable blend, mix thoroughly.
Cut the tomatoes in half or quarters depending how big they are. Mix these into the bowl and gently mix.
Cut the avocados into halves, take the core out. Use a knife to square them into cubes just like shown in the video. Mix into the bowl and gently mix everything together.

Eggs:
Boil 4-5 cups of water. Once boiling, add in the eggs and set the timer for 7 minutes, 9 minutes if you want the yolk to be fully cooked.
Once the timer is up, turn the stove off and run the eggs through cold water to stop the cooking process.
Peel and set aside.

Plating:
Start with the vegetable mixture (just like in the video)
Add the egg on top
Top it with green onion
Drizzle with a little bit of balsamic vinegar and voila!
